\"formaggellaLa Formaggella del Luinese è la nuova Dop della Lombardia<\/strong>. La Gazzetta Ufficiale dell’Unione Europea (serie L102 del 16 aprile 2011) ha infatti pubblicato il riconoscimento nel registro comunitario della “Farina di Castagne della Lunigiana” e della “Formagella del Luinese ” come Denominazioni di Origine Protetta. <\/strong><\/p>\n

Si tratta di un altro fiore all’occhiello dell’agricoltura della nostra regione<\/strong> – spiega la Coldiretti Lombardia – ed è il riconoscimento del costante lavoro sulla qualità che i nostri produttori fanno ogni giorno nelle loro aziende e che poi portano nei quasi 90 farmers’ market attivi in Lombardia. Con la Formagella del Luinese e con la Farina di castagne della Lunigiana il totale delle produzioni italiane che hanno ottenuto il riconoscimento Dop o Igp è salito a 225.<\/strong>

\nLa Dop “Formaggella del Luinese” è riservata al formaggio a pasta semidura<\/strong>, prodotto esclusivamente con latte intero e crudo di capra, a coagulazione presamica, con stagionatura minima di 20 giorni. Il latte possiede particolari caratteristiche organolettiche che conferiscono poi al formaggio prodotto la particolare sapidità, l’odore e l’aroma delicato, la spiccata prevalenza di una microflora lattica mista che lo caratterizzano. <\/p>\n

Il sapore è mediamente dolce, delicato, gradevole e si intensifica con il progredire della stagionatura<\/strong>. Il colore della pasta è omogeneo e prevalentemente bianco. Il territorio in cui viene prodotta la Formagella del Luinese è compreso nell’area nord della Provincia di Varese meglio definita come “Prealpi Varesine”. <\/p>\n","protected":false},"excerpt":{"rendered":"
