Italian-Chinese cuisine, by students from the Falcone Institute

The plan is to take Italian students to China, and bring Chinese students here, and then create new dishes together. The goal: an event at Expo 2015.

Might a new “cuisine” come from the meeting of Italian and Chinese students? It is possible, but we will only know in a few months, after an exchange visit involving students on the hotel course at the Falcone Institute, and those at a school in Wuhan.

The project (which will go ahead only if there are at least 10 students taking part) is being promoted by ScuolaImpresa, with the Giovanni Falcone Institute, ConfApi Varese and Dialogarte, and is being sponsored by Lombardy Region. The final goal is to organise an event at Expo 2015.

“The initiative is a very important one,” Angela Romano, the Chairperson of ScuolaImpresa, explained. “For three years, we’ve been working with China to create opportunities for young people to improve their professional skills, and to give them employment opportunities. And we decided to start with the hotel course.”

The idea is to take Italian students to China, for two weeks, in October, and to bring Chinese students here to Italy, so that each can learn about the cuisine of the other country. The students will then continue to collaborate, from their respective countries, using virtual media to exchange ideas and think up new combinations of ingredients from both countries, ingredients that could produce new flavours, aromas and dishes, that are both global and local in flavour. The project will end with an event at Expo 2015, when the new dishes will be presented.

Students of the Falcone Institute interested in taking part in the project can enrol today. The sum they will have to pay will cover travelling expenses, accommodation and transportation (€1500), but they will not have to pay anything towards organisation costs.
